Harvest Corn and Avocado Salad

This fall salad is easy and refreshing!

Ingredients

  • 1 Ear Large Corn on the Cobb
  • 1 Cup Cucumber (diced)
  • 1 Medium Avocado
  • 1 Cup Cherry Tomatoes (halved)
  • ½ Red Onion (diced)
  • 2 TBSP Lemon Olive Oil
  • 3 TBSP Garlic Olive Oil
  • 3 TBSP Balsamic Vinegar
  • Sea Salt (to taste)
  • Cracked Black Pepper (to taste)
  • Instructions

    1. Grill the ear of corn. If it's sweet corn you can use it uncooked.
    2. Using your 4" cleaver cut the kernels off the corn.
    3. Add kernels along with other ingredients to a bowl and mix well.
    4. Finish by drizzling Balsamic Vinegar over the top.
