Wölfe Cleaver Knife 4”
Forged from carbon alloy German steel. A small cleaver designed for chopping and dicing root vegetables such as sweet potatoes, carrots, brussels sprouts, and jicama. This knife is also excellent for shaving dense items like chocolate.
Wölfe cutlery incorporates a G10 handle material. G10 is a synthetic knife handle material made to withstand the rigor of professional kitchens and the everyday use of the enthusiastic home cook.
For the blade steel, we chose X50CrMoV15, a German carbon alloy steel, which is hard enough to maintain an excellent edge but not so hard that it is brittle and prone to chipping or difficult to maintain for someone using their knives daily.
